Barbadillo Amontillado
Barbadillo Amontillado is a dry, complex Sherry made from 100% Palomino Fino, beginning life as coastal Manzanilla before ageing oxidatively in the solera. Bottled at ~17–18% ABV, it offers roasted almond, citrus peel, caramel and sea-salted minerality with a long, elegant finish.
Produced by Barbadillo, one of Sanlúcar’s most historic bodegas (est. 1821), this is a classic, food-friendly Amontillado - refined, savoury and beautifully balanced. Perfect with tapas, charcuterie, cured cheese and dishes that challenge ordinary wines.
Barbadillo Amontillado bridges the salty freshness of Manzanilla with the nutty richness of oxidative Sherry. It begins life as a Manzanilla, aged under flor in Sanlúcar’s cool, ocean-influenced bodegas. As the flor weakens, the wine is exposed to oxygen, which deepens its colour, flavour and complexity.
The result is elegant, dry and beautifully layered: almond, hazelnut, caramelised orange peel, sea breeze salinity and warm spice with a refined, long finish. It’s superb as an aperitif, but also one of the most food-friendly Sherries — especially with savoury dishes, soups and cured meats.
Founded in 1821, Bodegas Barbadillo is one of the most historic producers in Sanlúcar de Barrameda and a global reference for traditional Manzanilla and fine Sherries. Their cathedral-style cellars capture the cool Atlantic winds that shape biological ageing.
By allowing the wine to evolve beyond flor and slowly oxidise, Barbadillo produces an Amontillado with both coastal freshness and mature complexity — a classic style from one of the region’s benchmark houses.
