Owned by the Günther‑Chéreau family, Château du Coing is a family‑run estate in Saint‑Fiacre, at the confluence of the Sèvre and Maine rivers. With winemaking traditions dating back over 600 years, Véronique Günther‑Chéreau revived the domaine in the 1990s, emphasizing estate-grown fruit, minimal intervention, and extended sur‑lie aging. Her daughter Aurore joined in 2011 after studies in Dijon, sustaining the family’s legacy with modern precision and terroir respect

Produced from Melon de Bourgogne grapes grown on old vines (many over 50 years old) planted in gneiss and schist soils - notable for imparting minerality and structure 
After pneumatic pressing and cold fermentation in stainless steel tanks, the wine is aged on fine lees for 8–14 months, without bâtonnage or new oak, allowing complexity and freshness to develop naturally

Description

Château du Coing de Saint-Fiacre 2022 comes from the Muscadet Sèvre-et-Maine appellation in the western Loire Valley, near Nantes and the Atlantic coast. This maritime influence plays a key role in shaping the wine’s character, preserving high acidity and contributing to its subtle saline freshness.

The wine is made from Melon de Bourgogne, a grape uniquely suited to the region’s granite and gneiss soils. These soils, combined with the cool coastal climate, produce wines that are less about overt fruit and more about precision, minerality, and structure.

Many wines from this estate are aged sur lie (on their fine lees), a traditional technique in Muscadet that adds a gentle roundness and texture while maintaining the wine’s crisp profile. Château du Coing is one of the historic reference points of the appellation, known for producing consistently clean, terroir-driven wines that highlight the purity of the region.
