Founded in 1090, Dievole is one of Tuscany’s oldest estates, located in the heart of Chianti Classico and known for its long tradition of crafting elegant Sangiovese and historic sweet wines. Their Vin Santo follows the centuries-old Tuscan method of drying grapes for months in well-ventilated lofts, before a slow fermentation and extended ageing in small wooden barrels — a labour-intensive process that yields richness, complexity and longevity.
