Regular price £82.00

A milestone in Ireland’s new era of independent distilling, Dingle Batch No. 5 marks the grand finale of the acclaimed Single Pot Still series — a collection that charted the rise of Dingle Distillery as a leader in small-batch, artisanal whiskey-making. Crafted from a traditional mash bill of malted and unmalted barley and triple-distilled in copper pot stills, this release exemplifies Dingle’s meticulous craftsmanship and coastal maturation style.

Matured in a combination of bourbon, Oloroso sherry, and Madeira casks, Batch No. 5 delivers a layered profile of dried fruit, honey, and vanilla balanced by toasted oak and warming spice. The Madeira influence adds a soft, wine-sweet richness, while the sherry casks lend depth and colour, creating a whiskey that is both vibrant and indulgent. Bottled at 46.5% ABV, it’s smooth yet powerful, offering a lasting finish of malt, fruit, and oak warmth.

Produced in County Kerry on Ireland’s wild Atlantic coast, Dingle Distillery has championed authenticity and independence since 2012 - crafting every drop on-site, from distillation to bottling. Batch No. 5 is a tribute to that journey: the culmination of a pioneering whiskey series and a testament to the distillery’s unwavering dedication to quality, innovation, and Irish spirit.

Overview & Distillery

Dingle Batch No. 5 Single Pot Still represents the fifth and final release in Dingle Distillery’s acclaimed Single Pot Still series — a collection that charted the evolution of one of Ireland’s most exciting independent whiskey producers. Matured in a combination of bourbon, Oloroso sherry, and Madeira casks, this limited-edition release showcases a perfect harmony of sweetness, spice, and depth, embodying the craft spirit of modern Irish whiskey-making.

The whiskey opens with vibrant aromas of dried fruit, honey, and toasted oak, leading to a rich and layered palate of caramel, malt, and warm spice. The Madeira influence adds a luxurious sweetness and fruity depth, while the pot still character delivers a creamy texture and lively spice. Bottled at 46.5% ABV, it strikes an exceptional balance between richness and refinement, marking the culmination of Dingle’s early handcrafted whiskey journey.

Located on Ireland’s rugged Atlantic coast in County Kerry, Dingle Distillery was founded in 2012 by The Porterhouse Brewing Company as part of the new wave of independent Irish distillers. From its inception, Dingle focused on small-batch, artisanal production — triple distilling its spirit in copper pot stills and maturing it in hand-selected casks within the unique coastal climate of the Dingle Peninsula.

Every drop of Dingle whiskey is distilled, matured, and bottled on-site, maintaining complete control over quality and authenticity. The Single Pot Still series, launched in 2018, became a milestone in Irish whiskey’s revival, with each batch highlighting the distillery’s evolving craftsmanship. Batch No. 5 stands as both a celebration and a farewell to that series — a bold, flavourful expression that captures the independent spirit, innovation, and dedication to excellence that define Dingle Distillery.
