The Crushed Grape

Dom Pérignon Vintage 2015

Regular price £195.00

A prestige Champagne of precision and depth, with citrus, white stone fruit, fine autolytic complexity, and extraordinary composure. Taut, elegant, and long-lived.

The Dom Pérignon 2015 represents the pinnacle of Champagne artistry – a vintage of precision, purity, and remarkable ageing potential. Crafted only in exceptional years, Dom Pérignon embodies the vision of the Benedictine monk whose name it bears: to create the world’s finest sparkling wine.

Produced by Moët & Chandon, this prestige cuvée has become a global icon of elegance and celebration, with each release telling the story of its unique harvest. The 2015 vintage was defined by a cool growing season and a late harvest, yielding grapes of striking freshness and structure.

This is a wine of duality – both approachable in its youth and capable of evolving gracefully for decades. With a drinking window of 20+ years, it will develop profound tertiary notes of honey, truffle, and spice while retaining its underlying freshness. Perfect with oysters, caviar, truffled chicken, or aged Comté, it is also a Champagne worthy of being savoured on its own as the centrepiece of any special occasion.

Description

Dom Pérignon Vintage 2015 is one of Champagne’s most recognisable prestige cuvées, and the expectations attached to the label are high for good reason. Dom Pérignon is always vintage-dated, and the style aims to unite concentration, precision, and age-worthiness in a way that feels more architectural than merely luxurious.

The 2015 vintage in Champagne is noted for its freshness and late ripening character, which suits the house style particularly well. Rather than broad opulence, the wine shows tension, line, and a very controlled build of fruit and autolytic complexity. That gives it a more restrained and intellectual profile than softer, more immediately open prestige styles.

Style

A dry, full-flavoured prestige Champagne with fine mousse, high definition, and significant ageing potential. It is not designed to feel soft or easy; it is built around precision, chalky length, and tightly wound complexity.

In simple terms: a serious prestige Champagne — elegant, taut, and built to unfold rather than simply impress through richness.

  • Appearance: Pale gold with very fine, persistent mousse.
  • Nose: Citrus zest, white stone fruit, brioche, chalk, and toasted nut complexity.
  • Palate: Focused fruit, precise acidity, and fine autolytic layering.
  • Texture: Silken mousse with taut, architectural structure.
  • Finish: Long, saline, mineral, and exceptionally composed.
  • Overall Impression: A beautifully poised prestige Champagne with real tension, depth, and long-term pedigree.
  • Lobster – A luxurious match worthy of prestige Champagne.
  • Scallops – Especially strong with refined shellfish dishes.
  • Sushi and Sashimi – The wine’s purity and precision work beautifully here.
  • Truffle Dishes – Fine autolytic depth can handle subtle truffle flavours.
  • Aperitif for Serious Tasting – Also excellent as a contemplative wine on its own.
  • Serve at 8–10°C, slightly warmer than simple non-vintage Brut to allow complexity to show.
  • No decanting is necessary, though time in the glass is beneficial.
  • Use white wine glasses rather than narrow flutes.
  • Drink now or cellar for a further 10–15 years.
