Bottled at cask strength, this exclusive collection exemplifies the artistry of Midleton’s whiskey makers and the influence of native Irish oak — offering a rare glimpse into how the character of each tree shapes flavour, aroma, and texture.

Each bottle is a one-of-a-kind expression, together forming a sensory map of Irish woodland terroir, brought to life by Midleton’s master distillers and coopers.

Crafted at the legendary Midleton Distillery in County Cork, the Dair Ghaelach series is a celebration of Ireland’s natural heritage and whiskey innovation. The project began as a collaboration between Midleton’s team, the Forestry Service, and Irish landowners to sustainably source native oak for coopering.

For Kilranelagh Forest, six majestic oak trees were felled, seasoned, and transformed into virgin hogsheads. Each cask was filled with mature Midleton pot still whiskey and finished for two years, allowing the oak’s influence to fully develop.

Sustainability lies at the heart of the project — each harvested tree is replaced with several new plantings, ensuring Irish oak’s legacy continues for future generations.
