Noilly Prat Original Dry is one of the world’s most iconic and traditional dry vermouths — crisp, herbal, gently savoury and distinctly French. Unlike most vermouths aged only indoors, Noilly Prat’s base wine spends 12 months in oak barrels outdoors, absorbing oxygen, marine influence, sun and wind. This creates a deeper, lightly oxidative, wine-forward flavour unique among dry vermouths.
After barrel ageing, the wine is slowly infused with herbs and botanicals for several weeks, producing a complex, crisp vermouth perfect for a classic Dry Martini, seafood pairings, aperitivo hour or cooking.
Its style is drier, more herbal and more aromatic than many Italian dry vermouths — a favourite of bartenders and chefs alike.
The story of Noilly Prat begins in 1813 when Joseph Noilly, a wine merchant in Lyon, developed a method of ageing white wine outdoors in casks, inspired by barrels that had travelled long sea voyages. The barrels’ exposure to oxygen and changing temperatures created a distinct, complex flavour.
Later perfected in Marseillan, on the French Mediterranean coast, Noilly Prat became France’s most famous vermouth and a staple in both cocktail culture and gastronomy. Today, the original outdoor barrel ageing continues at the same historic winery, making Noilly Prat one of the most artisanal vermouths in the world.
