The Pierre Paillard Les Parcelles NV is a striking expression of Grand Cru Champagne, crafted by the Paillard family from their estate vineyards in Bouzy, one of the most celebrated villages on the Montagne de Reims. With eight generations of grower-producers behind them, the Paillards remain dedicated to producing Champagnes that are both terroir-driven and elegant, reflecting the unique chalk and clay soils of their Grand Cru holdings.

This cuvée is built primarily from Pinot Noir (70–80%), which lends depth, body, and red-fruited character, supported by Chardonnay (20–30%) that contributes finesse and tension. A portion of reserve wines enhances complexity, while a deliberately low dosage (~1–2 g/L) in the Extra Brut style keeps the wine crisp, dry, and precise. Extended lees ageing imparts richness and texture, giving the wine an extra dimension of brioche and toasted nut.

Versatile and gastronomic, this Champagne shines as both an apéritif and a food wine, pairing beautifully with oysters, sashimi, roast poultry, or aged cheeses. Sourced from Grand Cru sites, the wine is intended to show more chalky detail and site expression than a simple market-facing non-vintage Brut.
