Distilled by Irish Distillers and laid down for over two decades in a single carefully selected first-fill Oloroso sherry cask, this 21-year-old bottling was drawn and bottled at natural cask strength, capturing the whiskey in its most authentic and unadulterated form.
On the nose, this single cask opens with plump raisins, figs, dark chocolate, and candied orange peel, lifted by aromatic spice and warm oak polish. The palate reveals a layered richness – plums, dates, mocha, nutmeg, and gentle tobacco – supported by the unmistakable weight of sherry-seasoned oak. The finish is long, warming, and elegant, with a final echo of dark fruit, toasted nut, and lingering sweetness that reflects both age and cask influence.

This particular bottling was distilled in 1998 and matured for a full 21 years in a single sherry cask before being bottled at natural cask strength. Unlike the standard Redbreast 21 Year Old, which is matured in a combination of bourbon barrels and Oloroso sherry casks, this release spent its entire maturation in a single sherry cask, resulting in significantly greater concentration, richness, and sherry influence.
The whiskey was selected and bottled exclusively for Blake’s of the Hollow, one of Ireland’s most famous traditional pubs, located in Enniskillen, County Fermanagh. Hand-selected by Midleton Master Blender Billy Leighton, the release was bottled from a single cask with an outturn of just 552 bottles worldwide, making it highly collectible from the moment of release.
Bottled at 58.3% ABV, the whiskey retains its natural oils, texture, and intensity. The combination of long maturation, cask strength bottling, and all-sherry ageing creates a style rarely seen in Irish whiskey. While many older whiskies risk becoming overly oak-driven, the quality of the cask and the character of Redbreast's spirit have combined to produce a whiskey of exceptional balance and depth.
