Valdespino “Tío Diego” Amontillado is a single-vineyard dry Sherry made from 100% Palomino Fino grown in the famous Macharnudo Alto vineyard. Barrel-fermented and aged for over a decade through biological and oxidative phases in solera, it is bottled at ~18% ABV with extraordinary nutty depth, citrus peel, saline minerality and a long, elegant finish.

Tío Diego is considered one of the greatest classic Amontillados in Jerez — refined, bone-dry, elegant and deeply complex. Like only the most traditional examples, it begins life as a Fino aged under flor in the prestigious Macharnudo Alto vineyard, benefiting from albariza limestone soils and long, undisturbed ageing.
As the flor naturally fades, the wine ages oxidatively, gaining warm nutty richness, amber colour and layers of dried fruit, leather, spice and salinity. The result is a benchmark Amontillado with remarkable finesse, chalky minerality and a long, savoury, unforgettable finish.

Valdespino is one of the oldest Sherry houses, with history dating back to 1264, and famous for defending traditional methods. They are one of the very few producers who still:
